Classic Iced Biscuits

Ingredients
- 300g plain flour
- 150g unsalted butter, softened
- 100g caster sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Pinch of salt
For Decorating:
- Ready-to-use icing tubes in your chosen colours
- Rainbow sprinkles
Instructions
Make the Dough: Beat the butter and sugar together until pale and fluffy. Add the egg and vanilla, mixing until combined. Sift in the flour and salt, then mix until a smooth dough forms.
Chill: Shape the dough into a disc, wrap in cling film, and refrigerate for at least 30 minutes.
Roll and Cut: Preheat your oven to 180°C (160°C fan/Gas 4). Line baking trays with parchment paper. Roll the dough out on a lightly floured surface to about 4mm thickness. Cut out shapes with cookie cutters and place on the prepared trays, leaving 2cm between each.
Bake: Bake for 10–12 minutes until the edges are just beginning to turn golden. The centres should still look pale. Cool on the trays for 5 minutes, then transfer to wire racks to cool completely.
Decorate: Use your icing tubes to pipe outlines and fill in your biscuits, or create patterns, dots, and swirls. Add rainbow sprinkles while the icing is still wet. Allow to dry completely — about 2–3 hours.
Enjoy: Store in an airtight tin for up to 1 week. Perfect for celebrations, parties, or edible gifts.
